The Calvados AOC Pays d’Auge is obtained through a process of simple distillation of cider in an “alambic à colonne” (which translates as a “simple distillation still”). Aged in oak barrels for a minimum of 20 years.
Nose - Initial aromas of peach compote, prune, crème brûlée, saffron and leather. Follow by Port, Madeira wine and old Banyuls. With hints of white flower, sandalwood and eucalyptus.
Palate - Round, long, smooth and full-bodied with tarte tatin and crystallised apple flavors. Complemented by white pepper, crystallised orange and vanilla cream.
