About this agave distillate:
- By Master Distiller, Delfino Tobon Mejia
- 10 - 15 years old agave Papalome (a. potatorum) - From San Pablo Ameyaltepec, Puebla
- Single distilled in a homemade three-plate steel and copper hybrid still, second distillation with cooked chicken and Mole Poblano.
The result is a pechuga that is exceptionally polished, effervescent and unlike any pechuga style agave spirit around.
Nose - Oatmeal, cedar, chamomile, lemonade.
Palate - Creamy dessert, matcha macaron, sweet chocolate, nuts, cinnamon spice.
